Easy Mushroom & Arugula Pizza

Serves 3 to 4
Pizza dough (use your own recipe or buy a ready-made crust from the grocery store)
Flour
6 to 8 ounces mozzarella, sliced or shredded
2 tablespoons olive oil
1/2 red onion, thinly sliced
3 cups mixed mushrooms
2 cloves garlic, finely chopped
2-1/2 cups arugula, packed
Salt and freshly ground pepper, to taste

1. Preheat oven to 425ºF.
2. Lay out or roll dough into a rectangular or circular shape on your Clay Bakeware Pizza Stone, dusting the stone first with flour.
3. Arrange mozzarella slices across pizza, set aside.
4. In a large nonstick skillet, saute oil, onion, garlic, and mushrooms for about 3 minutes, tossing to coat with oil. Add arugula and cook until wilted, tossing occasionally.
5. Turn off heat, season skillet mixture with salt and pepper.
6. Spread skilled mixture evenly over the cheese and pizza crust.
7. Place pizza stone on middle rack in the oven and bake until the crust is golden brown or about 12 to 17 minutes.
8. Remove and let pizza cool for several minutes.
9. Serve and enjoy!
